Fossil Ridge's policy is to delay release of wines until such time that they have achieved sufficient bottle age whilst having an acid balance that retains life with cellaring.

Crop volumes are carefully managed with a view to ensuring optimal ripening and flavour intensity – 2 ton/acre Pinot Noir, 3 ton/acre Chardonnay and there are no shortcuts to achieving what is deemed desirable. Grapes are sourced from the Fossil Ridge Vineyard, are all hand picked sorted and the Chardonnay and Riesling whole bunch pressed.

This represents 70% clone 15, 30% Mandoza blend. The wine is barrel fermented in quality French and American (30% new) barriques with a portion put aside that is not malolactic fermented to blend for the desired balance of acidity and oak. Our Chardonnays are consequently full bodied and complex.


Growing Riesling is challenging in the Nelson climate as it is a late ripening grape. We have however found the experience to be rewarding. We have focused on a dryish style that cellars well and is gaining increasing consumer recognition. A versatile and refreshing wine that can be taken alone or complimenting a wide range of foods: particularly seafood or Asian.

Our wines are traditional to variety with elegant, fresh fruit driven styles showing complexity peculiar to our terroir.

This variety we have found to be particularly suited to our vineyard site with a single clone to date soon to be complimented with a small planting of Dijon. Our Pinot Noir is carefully vinted in open vats, traditional Burgundy style and aged in high quality French barriques. Our Pinot is of the savoury style, characteristically soft, elegant, complex and is a particularly good food match wine.



Vinted from 100% Pinot Noir grapes – we take our Rosé making seriously. The grapes picked with Rosé in mind, soaking on skins for a matter of hours to get a blush red salmon hue and exquisite flavours of strawberries and cream. A delightful summer wine excellent with cheeses and over lunch.

Pinot Noir


This grape has a reputation for fickle behaviour in the vineyard hence it is great when we get a good season for this variety. Fruit is whole bunch pressed to get enticing flavours of lychees and spices with a perfumed bouquet. Particularly suited to have with Asian Thai style food.
